The Cabernet is very much a fruit-driven wine, reflecting an ideal growing season. This wine was made from low-yielding Cabernet grown in the Armagh and Polish Hill River regions of the Clare Valley. The bouquet displays powerful jube and blackcurrant fruit. The palate is layered and flavoursome with vibrant fruit characters, balanced with a finish displaying wonderful fine, long and Bible-black tannins.

 

Gamey, dark berry plum, with hints of sappy juicy pinot fruit. Complex, supported with subtle oak influence. The palate oozes silky, long, balanced acid and fine-grained tannin. Post primary fermentation the wine was left on skins for a further 30 days, then pressed and racked into 100% French Oak, Sirugue and Dargaud et Jaegle: one-third new, one-third 1-2 year-old, one-third 4-5 year-old.

 

Floral perfume and spice are all consuming on the bouquet of this deep fruity red, with a silky palate and a long alluring velvet finish – co-fermented with Viognier grapes and hand crafted in a small two tonne fermenter- will age over the next five to seven years.
