Medium straw in color with green lifted stone-fruit and spice aromas of quince, peach and apricot. A medium weight richly textured wine showing floral, citrus characters and amazing depth of flavor.
Showing a lot of fennel, pure limes and spice. There is a fine line between power and finesse and the Watervale is gun barrel straight. The palate is flavoursome with intense lime and steely acidity and a clean, crisp finish. Natural acidity is again a feature this year, balancing the powerful and long fruit palate that epitomises the 2005 vintage
Only 9 kilometres from Watervale, the Polish Hill River region is quite a bit cooler and typically the fruit ripens 2-3 weeks later. This, combined with the soil, produces fruit with finesse and intensity. It is the slate of Polish Hill River, as opposed to the limestone of Watervale that gives rise to the point of difference between these styles.
Gamey, dark berry plum, with hints of sappy juicy pinot fruit. Complex, supported with subtle oak influence. The palate oozes silky, long, balanced acid and fine-grained tannin. Post primary fermentation the wine was left on skins for a further 30 days, then pressed and racked into 100% French Oak, one-third new, one-third 1-2 year-old, one-third 4-5 year-old.
