Domaine Hubert Lamy - Rue des Laviéres, Saint-Aubin

The Lamy family have worked the vines in St. Aubin since 1640. Today Hubert's son, Olivier, has joined him and they have 16 hectares around the villages of Saint-Aubin, Puligny-Montrachet, Chassagne-Montrachet and Santenay.

Olivier Lamy, having first studied winemaking and commerce, joined the Domaine in 1995. Prior to joining his father he did training courses in several other Domaines and tasted wines from all over the world. With this experience he was able to bring new ideas and new methods of working in the vines and in the cellar.

Most of the development of the Domaine was during the 1990's when new vines were bought or rented (Clos de la Chatenière, Derrière Chez Edouard, Murgers des dents de Chien, Clos du Meix, Santenay Clos des Hâtes) or planted (En Remilly). Some parcels which were planted with Pinot Noir vines were changed to Chardonnay vines because it was considered this was a better choice for the soil type (La Princée).

The world famous and ancient Burgundy vineyards cover more than 31,500 square km and stretch like a thin finger for 110 km from Chablis in the north, through the Côte de Nuits to the Côte de Chalonnaise, the Mâconnais and Beaujolais, just north of Lyon. The climate is ideal and the soil rich and fertile, the wines strong, well-structured, balanced and very aromatic. The result is 30,000 growers and over 700 different Appellation Contrôlées. The region may be fragmented but with the emergence of some young and dedicated growers and some superb recent vintages, quality is at an all time high.

Santenay wine is produced in the communes of Santenay and Remigny in Côte de Beaune of Burgundy. The Appellation d'origine contrôlée (AOC) Santenay may be used for red and white wine with respectively Pinot Noir and Chardonnay as the main grape variety. The production consists of almost 85% red wine, and a little over 15% of white wine. There are no Grand Cru vineyards within the Santenay AOC.

The are 12 climats in Santenay classified as Premier Cru vineyards, located in three different parts of the commune of Santenay. (There are no Premier Cru vineyards within Remigny.) Some of these climats are located in the west, in the direction of Dezize-lès-Maranges (a commune which produces Maranges wine), some are located in the middle of the commune, just uphill from the village of Santenay, and some are located in the northeast, close to the border of Chassagne-Montrachet, and forming a continuous band of Premier Cru vineyards with those in that commune.
