Domaine de Oliveira - Chablis, Burgundy
The family vignerons of Oliveira Lecestre is situated in the village of Fontenay Pres Chablis, with Ben Quevreux in charge of wine production.
The domaine has holdings throughout the region, including vineyards in the Premier Cru zone of Fourchaume and the Grand Cru ‘Les Clos’, and is able to offer a gambit of styles. The Petit Chablis and Chablis is vinified in stainless steel, whilst the 1er Cru and Grand Crus are aged in new oak barrels for between 6 and 8 months, to add complexity. The richness on the palate of a true Chablis is married with the clay soil, imparting a clean, mineral character on all the wines with a combination of citrus fruit, spring flowers and peach preserves.
The world famous and ancient Burgundy vineyards cover more than 31,500 square km and stretch like a thin finger for 110 km from Chablis in the north, through the Côte de Nuits to the Côte de Chalonnaise, the Mâconnais and Beaujolais, just north of Lyon. The climate is ideal and the soil rich and fertile, the wines strong, well-structured, balanced and very aromatic. The result is 30,000 growers and over 700 different Appellation Contrôlées. The region may be fragmented but with the emergence of some young and dedicated growers and some superb recent vintages, quality is at an all time high.
The Chablis region is the northernmost wine district of the Burgundy region in France. The grapevines around the town of Chablis are almost all Chardonnay, making a dry white wine renowned for the purity of its aroma and taste. The cool climate of this region produces wines with more acidity and flavors less fruity than Chardonnay wines grown in warmer climates, The wines often have a "flinty" note, sometimes described as "goût de pierre à fusil", tasting of gunflint, and sometimes as "steely". In comparison to the white wines from the rest of Burgundy, Chablis has on average much less influence of oak. Most basic Chablis is completely unoaked, and vinified in stainless steel tanks. The amount of barrel maturation, if any, is a stylistic choice which varies widely among Chablis producers. Many Grand Cru and Premier Cru wines receive some maturation in oak barrels, but typically the time in barrel and the proportion of new barrels is much smaller than for white wines of Côte de Beaune.
